4 chicken breasts (stewed boned cut into bite size pieces)
1 onion (chopped)
1/2 cup butter
1 small can cream of mushroom soup
1 small can cream of chicken soup
1 can Rotel
3/4 pound Velveeta cheese
12 ounces Cool Ranch Doritos
Saute onions in butter. Add soups & tomatoes. Cube Velveeta, add & simmer until it melts. Add chicken. Crumble Doritos in bottom of casserole (save a few for top of casserole). Add chicken mixture and top with remaining Doritos. Bake at 350 for 30 minutes. If you are really in a hurry, just mix the chicken with the creamed soups. Skip the onions and butter (leave them out). Simply layer the chicken mixture, Rotel, a bag of shredded cheese and doritos in a deep casserole dish. Bake at 350 for 30 minutes. It’s delicious either way!
½ cup olive oil
¼ cup balsamic vinegar
2 tbsp cider vinegar
2 tbsp honey
3 large garlic cloves
1 tbsp fresh rosemary
1 tbsp Dijon mustard
1 lb. chicken breasts (is also good on pork tenderloin)
Blend first 7 ingredients in a food processor until garlic and rosemary are finely chopped. Place chicken in heavy plastic bag and pour marinade over chicken. Seal bag and refrigerate overnight, turning occasionally.
Preheat oven to 375. Drain chicken and discard marinade.
Place chicken in small roasting pan or baking dish.
Roast for about 25 minutes.

So how about Bacon and Apple Bread Pudding?….seriously bacon with dessert….its an awesome mix….long to write here…i can email it….and yes I am a vegetarian
I know you are going to think I am crazy but this recipe is for the BEST blueberry muffins…ever. They are also vegan (dont be afraid!!!!)
1/2 cup quick oats
1 1/2 cup flour
1 1/4 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
1/2 cup sugar
1/2 cup orange juice
1/2 cup olive oil
1 cup blueberries (I freeze them so the muffins dont turn colors while folding them in)
topping…seperate bowl
2 tablespoons sugar
1/2 tsp cinnamon
combine ingredients mix well, fold in blueberries. spoon into non-stick muffin pans or into paper liners. Mix the topping together & sprinkle over muffins, bake at 400 for 18 to 20 minutes or until top is golden brown.
makes 12 to 18 muffins depending on size & how much batter you eat before you put them in the cups…..p.s. Im not counting calories…
I tried your banana bread recipe!! It came at the perfect time because we had some bananas that had been hanging around and were at the optimal banana bread stage! My three year old, Eisley, and my two year old, Grady, helped me mix up the batter and pour it into the pan….and then they also helped me eat the entire loaf within 3 days of it coming out of the oven!!! Delicious
