Giving Thanks

Where does one start. I feel like this week has been filled with events, people and situations I have to be thankful for and it is only Wednesday.

As some of you know, I just got back from my second trip to China. I am in awe each time and it takes me a few days before realizing where I am. How many people can say they have been to China. “Is this really my job?” I say to myself over and over as we walk the streets in Shanghai. Each view more beautiful then the next.

This trip I was accompanied by Lynette, Cindy and Carla. I have never laughed so much in my life. I am so thankful for all three of these ladies in more ways then I can count. For my travel partner, Lynette, you are everything I hope to be in a Mother and Women. To Cindy, for your HUGE heart and sense of humor, and to Carla for everything you have taught me and everything I have yet to learn. It amazes me the women you come in contact with through MJC. From the customers to the Trunk Keepers, you ladies amaze me, always so full of laughter, passion, and kindness. THANK YOU THANK YOU THANK YOU!

On a side note, sorry if this is off subject, but for all you Fort Wayne readers. Look who was on our flight. Fort Wayne’s re-elected Mayor. What are the chances? I see why he was re-elected; even after a 15 hour flight he was so sweet and kind. Thank you, Mr. Mayor for posing for a pic so Denise would believe us.

Today the whole MJC family sat together for Lunch. These are moments to be thankful for, a bunch of great girls and (David, Joe and Gabe) taking time to laugh together and enjoy one another before Thanksgiving. I think it is important to do that every once in awhile, and Denise is so good at arranging that. Denise and David’s kindness is endless and are the main reason I have so much to be Thankful for.ย  “Thank you” would never be enough to show my gratitude, but none the less, “THANK YOU” one more time.ย  My life was forever changed after that late night interview while Gabe ran crazy across the cutting table. (The part about Gabe hasn’t changed though. LOL). MJC is who I am and for that I thankful.

I think I could go on and on for all of the things I am thankful for but I will save that for another day. In honor of Thanksgiving and for David (He made us do this at lunch so I am passing it on)

My favorite kind of pie is pumpkin and specifically the pumpkin pie from Bakesale Bettie’s in Oakland. Yum, clove spicy with whipped cream.

I’m not a big sweet eater, I much more prefer salt… and I’d rather have vegetables than dessert any day. I’m weird, I know.. but I would have to say Pecan or Key Lime.

Hi Kayla – What a great blog!! I love that all of you really really show how much you appreciate your employer (I know Denise and David are much more than that, but it is very cool). Anyways, my favorite pie is my mother-in-law’s homemade from scratch lemon meringue pie…everything from scratch including the pie crust!! Her meringue is always perfect!

My favorite pie is the one I am going to make with my daughter tomorrow. It’s going to be a blackberry and blueberry pie. We’ve never made it before, but no matter how it turns out, it is already my favorite…. We moved to a new home this year and she has been sad about missing old neighbors (she is 8.) She was nervous about the holidays and what traditions we would have in a different place. I told her we get to make new traditions! :) She came up with the idea of having a family pie baking contest, boys v. girls. She decided on the recipe and she and I will bake it together tomorrow (of course we bought all of our ingredients days ago and the boys are at the grocery store at this very moment, only a few hours before Thanksgiving, trying to come up with something! Boys, LOL!) Seeing her be excited again, instead of apprehensive, about Thanksgiving in our new home and getting to have some giggles together has been such a joy! So, whether the pie is good or not, it will be my favorite ever (until we beat the boys again next year, of course!) Thanks for asking so that I got a chance to reflect and share… and be thankful! :) Happy Thanksgiving!

Sad to see no responses yet and still in awe of the 7″ of snow we got in good ole Maine today, so I’ll answer. My favorite kind of pie…MY apple pie. Yup…not just my recipe, but the way I make it. My own crust, my own pie filling consisting of fresh cut apples and little else. No gooey canned filling, just all my love in it’s crusty warm goodness. Baking and I do NOT go well together, but apple pie? That, I CAN do.

My current favorite pie is this Easy Skillet apple pie. I don’t even like apple pie but O. M. G. This pie is like none other and even I can make it! My favorite Thanksgiving pie is Pumpkin Custard from this little Amish bakery in between Middlebury and Shipshwana. I’m so hungry now!!!

I love apple pie with ice cream and whipped cream on the side, but my absolute all time fave is lemon Meringue! I love to tell the story of how I made one in Air Force Cooking school and the instructor told em if I could make that, I could make anything. Well it came out perfect! I am NOT a baker at all, so it was a proud moment for me. Not the only reason why I love the pie, but I thought I’d share the story too.

My favorite kind of pie is my grandmother’s pecan pie. I have tried others ( including Wolfgang Puck’s) and they don’t compare! I have even asked her for the recipe and made it myself, but to no avail. Her’s is just the best!

I love toll house pie with vanilla ice cream! There is a small family owned restaurant near me where they make home made pies everyday. They have lots of amazing flavors, but toll house is my fave!

My favorite pie is a real home made chocolate made from scratch where I have to beat eggs for 30 minutes to make the topping and to watch it vanish in less than 5 minutes.
Now if you ask my kids they would all tell you mama’s egg custard pies, I am told mine are great but I don’t like them….
